My mother's cornbread recipe called for 3/4 cup white cornmeal & 1/4 cup white flour, along with the baking powder, etc.
I went gluten-free recently & tried the War Eagle Mill corn flour in place of the white flour. Best cornbread ever!
I've also used this corn flour to fry chicken. It's delicious! Crispy & crunchy.
